Make-ahead taco meat combines with melty cheese for a hearty but healthy after-school snack, or an easy weeknight dinner with a salad on the side.

For taco seasoning:
- 2 Tablespoons chili powder
- ½ Tablespoon cumin
- ½ Tablespoon onion powder
- ½ teaspoon oregano
- ½ teaspoon garlic powder
- 1/8 – ¼ teaspoon cayenne, depending on your preference
- 1/8 teaspoon cinnamon
For the taco melts:
- ½ cup minced onion (about 1 small)
- ¼ cup minced bell pepper (any color)
- 1 pound lean ground turkey
- 8 oz can of tomato sauce (or ½ cup)
- 1/3 – ½ cup Water
- 6 ounces shredded colby-jack cheese or Mexican shredded cheese blend
- 8 whole wheat tortillas (8-inch or fajita size)
- ½ cup of your favorite salsa
- Mix all of the spices for the taco seasoning together in a small bowl or container. You will need 1 ½ Tablespoons for this recipe. The rest can be stored in an airtight container for your next taco night.
- Spray a skillet with cooking spray and set it over medium heat. Add the minced onion, minced bell pepper, and ground turkey. Cook, stirring occasionally to break up the turkey, until the turkey is no longer pink.
- Put the tomato sauce in a measuring cup and add enough water to reach 1 cup. Add the tomato-water mixture to the skillet with the turkey. Mix in 1 ½ Tablespoons of the taco seasoning. Cover the skillet and turn the heat to low. Simmer for 15 minutes to allow the flavors to meld.
- Uncover the turkey meat mixture and increase heat to medium. Cook for 3-5 minutes or until the liquid thickens and has mostly evaporated. At this point, you can refrigerate the taco meat to use at a later time, if you wish.
- Assemble the taco melts:
– Lay a tortilla on a microwave-safe plate.
– Place 1/3 cup taco meat plus ¼ cup shredded cheese and about 1 Tablespoon salsa on half of the tortilla.
– Fold the other half of the tortilla over the filling.
– Microwave for about 60 seconds or until meat is heated and cheese is melty. Enjoy!
Cook’s Notes:
The taco seasoning is salt-free, unlike packets you find in the grocery store. If you are not used to eating salt-free meals, you may want to add ½ teaspoon salt to the mixture.
