Beets for Brain Health: A Simple Spring Salad Recipe
Looking for an easy way to support brain health? Add beets to your meals. These colorful vegetables help improve blood flow to the brain, which supports memory, focus, and decision‑making. Beets also contain antioxidants and important nutrients that help protect brain cells as you age. Eating beets regularly—and staying active—may help keep your mind sharp. Fresh beets from your garden or farmer’s market are a great place to start.
Roasted Beet & Spring Greens Salad
Ingredients:
- 6 beets, tops removed
- 1/2 pound of baby spring greens
- 4 carrots, shredded
- 6 radishes, sliced
- ½ cup olive oil, plus 2 tablespoons, divided
- ½ cup balsamic vinegar
- Salt and pepper, to taste
Instructions:
- Pre-heat oven to 350 degrees. Wash and dry all produce. Scrub beets well.
- In a large bowl, mix the salad greens, carrots and radishes.
- In a small bowl, slowly whisk ½ cup olive oil into the balsamic while. Add salt and pepper to taste.
- Place beets on a foil‑lined baking sheet. Toss with 2 tablespoons olive oil, salt, and pepper.
- Cover beets with foil and bake for 40–45 minutes, until soft.
- Let beets cool. Remove skins and cut into quarters.
- Add beets to the salad. Drizzle with dressing and toss. Enjoy!
