Easy Crustless Spinach Quiche Recipe for Breakfast, Lunch or Dinner

This easy crustless spinach quiche is a tasty meal that works for breakfast, lunch or dinner. It is packed with protein from eggs and cheese and includes spinach for added nutrition. Best of all, it can be made ahead and enjoyed throughout the week.

Ingredients

  • 6 large eggs
  • 1 cup 1% milk
  • 2½ cups shredded extra-sharp cheddar cheese
  • 8 cups loosely packed fresh spinach leaves
  • ½ tablespoon olive oil
  • ¼ teaspoon ground black pepper

Directions

  1. Preheat the oven to 350°F.
  2. Spray a 9-inch pie pan with non-stick cooking spray and set aside.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the spinach and cook until just wilted, about 2–3 minutes.
  5. Place the spinach in a strainer and press gently with a spatula to remove as much liquid as possible. Set aside.
  6. In a large bowl, whisk the eggs until well beaten.
  7. Add the milk and black pepper. Whisk until combined.
  8. Pour the egg mixture into the prepared pie pan.
  9. Spread the drained spinach evenly over the egg mixture.
  10. Sprinkle the shredded cheese evenly on top.
  11. Bake for 40–50 minutes, or until the top is lightly browned and a knife inserted near the center comes out clean.
  12. Let cool for a few minutes before slicing and serving.

Serving Tips
Serve this quiche with a side salad or a serving of whole grains, such as whole wheat toast or brown rice. It makes a satisfying meal any time of day.

Storage Tips
Leftovers keep well in the refrigerator and can be reheated for a quick meal later in the week. You can also prepare the quiche ahead of time and store it in the refrigerator until ready to serve. Reheat the whole quiche or warm individual slices as needed.

Easy Recipe Changes
Don’t have spinach or simply don’t enjoy it? Try using another cooked vegetable instead. You can also use less spinach and add vegetables such as mushrooms, broccoli, peppers, or onions.

For best results, cook vegetables before adding them to the quiche. Raw vegetables can release extra moisture during baking and make the quiche watery.
