Easy Feel‑Good Greens with Citrus & Pumpkin Seeds
This quick side dish uses leafy greens, citrus juice, and crunchy pumpkin seeds. It tastes great and goes well with roasted chicken thighs.
Ingredients
- 2 teaspoons olive oil
- 1 bunch leafy greens (like kale or Swiss chard)
- ½ teaspoon garlic powder
- 2 Tablespoons orange juice
- 1 Tablespoon lime juice (about ½ lime)
- 2 Tablespoons roasted pumpkin seeds
- A pinch of salt (optional)
Directions
- Wash the greens well. Pull the leaves off the thick stems. Save the stems for another recipe.
- Chop the leaves into large pieces.
- Heat the olive oil in a wide pan on medium-high heat.
- Add the greens, garlic powder, and a pinch of salt. Cover the pan and steam for about 1 minute, until the greens start to wilt.
- Take off the cover and cook for 3–4 more minutes, stirring often.
- When the greens are as soft as you like, pour in the orange and lime juice. Stir to coat the greens, then turn off the heat.
- Serve the greens and sprinkle the roasted pumpkin seeds on top.

Don’t toss the stems! You can chop them and add them to soups, casseroles or blend them into a smoothie.
